Ingredients

For Dough

  • 2 cups Wheat Flour (+ for dusting)
  • 1 tsp Salt
  • 1 cup Water (as needed)
  • 1 tsp Oil (+ for frying)

For Radish Filling

  • 2 large White Radish
  • 1 no Green Chilli (finely chopped)
  • 2 tsp Chilli Powder
  • 2 tsp Cumin Powder
  • ½ tsp Garam Masala Powder
  • 2 tsp Chat Masala Powder
  • 1 tsp Ginger Garlic Paste
  • ½ cup Coriander Leaves (finely chopped)
  • Salt (to taste)

For Dusting and Cooking Paratha

  • 12 tsp Oil or Ghee (for cooking paratha)
  • ¼ cup Whole Wheat Flour (for dusting)

Steps

  1. 1

Make the paratha dough. Take wheat flour, salt in a bowl and mix well. Now add in water little at a time and knead to a soft dough. Cover the dough with a plate and let it rest for 30 minute.

  2. 2

Grate the white radish through a grater. Place grated radish in a bowl. Sprinkle 1/2 tsp salt over it and mix well. Set aside for 5 minutes. Now use your hands to squeeze out as much water as possible. Take the squeeze radish in a bowl and set aside.

  3. 3

Now add in chilli powder, cumin powder, chaat masala, garam masala powder, ginger garlic paste, coriander leaves, green chillies and salt over grated radish and toss gently. This is your filling.

  4. 4

Now lets stuff and roll the paratha. Take the dough and knead it once to combine. Divide the paratha dough into 6 equal portions.

  5. 5

Take a portion of dough and flatten it using your hands. The sides of the dough should be thinner than the centre of the dough.

  6. 6

Place 1/4 cup of radish filling inside paratha dough. Sprinkle some wheat flour on top of the filling, this removes any moisture from the filling.

  7. 7

Bring the sides of the dough to the centre. Seal the edges and shape into smooth ball. Dust the dough with some flour on both sides. Flatten it gently,

  8. 8

Dust both sides with wheat flour. Now without giving much pressure, Roll it into thick paratha. Don't give too much pressure when rolling.

  9. 9

Place paratha on a hot tawa. Let it cook for 30 seconds, flip over and apply 1 tsp of ghee or oil. Flip over and apply 1 tsp more ghee or oil on other side too. Cook on medium high heat for few seconds on each sides till the paratha gets golden brown.

  10. 10

Remove the paratha and serve with curd, pickle.
