Italian Meatballs (No Sauce)

Ingredients

  • 1/2 cup fresh breadcrumbs
  • 1/4 cup milk
  • 1 large egg plus 2 egg yolks
  • 1/2 cup grated Pecorino Romano or Parmesan
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef
  • 1 pound ground pork
  • 1/4 cup finely chopped onion (optional)
  • 1/4 cup chopped parsley
  • Olive oil, for browning

Steps

  1. 1

Put the breadcrumbs in a small bowl and pour the milk over them. Let them soak for about 5 minutes.

  2. 2

Add the egg, egg yolks, cheese, garlic, salt, and pepper to the breadcrumb mixture and mash into a paste.

  3. 3

In a large bowl, combine the beef, pork, and onion if using. Add the breadcrumb mixture and parsley, then mix gently until just combined.

  4. 4

Form into meatballs, about 2 tablespoons each for medium size or slightly larger if you want a heartier meatball.

  5. 5

Brown them in a skillet with olive oil over medium-high heat, turning to get color on all sides.

  6. 6

Lower the heat, cover, and cook until the meatballs reach 165°F internally.

  7. 7

Serve plain, with a little extra cheese, or alongside pasta, bread, or roasted vegetables.
