Ingredients
- 1 Tbsp olive oil
- 10 oz bacon (cut into small pieces or pancetta)
- 1 large onion (sliced, or 5 shallots)
- 8 oz feta cheese (crumbled)
- 1 cup ricotta (or cottage cheese)
- 8 oz cream cheese ( softened )
- 3 eggs
- ½ tsp salt
- ⅛ tsp black pepper (to taste)
- 1 savory tart shell (slightly baked for about 8 to 10 minutes (don't use a sweet pastry,))
Steps
- 1
Heat olive oil in a sauté pan and add the pancetta pieces. Cook until it starts to brown, then remove from pan and set aside.
- 2
In the same pan, sauteé the shallots or onion until caramelized (this should take about ½ hour or so).
- 3
Preheat the oven to 375°F (190°C).
- 4
Beat the eggs with the salt in a bowl and set aside.
- 5
While the onions are cooking, place the three cheeses in a bowl and mix in the beaten eggs. Add the pancetta and caramelized shallots/onion and some freshly ground black pepper. Stir until well combined.
- 6
Put the mixture into the partially baked tart crust then put into the oven.
- 7
Bake the caramelized onion, pancetta and feta cheese tart for about 40 minutes or until golden brown on top.
- 8
Allow to cool slightly and serve warm, or even at room temperature, with a green salad.
