Ingredients
- 2 apples (granny smith, I like them tart)
- 5 oz arugula (1 container)
- ¼ cup aged white cheddar (freshly grated, and more shaved for topping the salad)
- ¾ cup almonds (sliced)
- 1 tsp honey
- 2 tbsp red wine vinegar
- ½ lemon
- 1 tsp dijon mustard
- 1 tsp mayo
- ⅓ cup olive oil (plus 2 tbsp)
- Pinch of salt and pepper
Steps
- 1
Slice your apples VERY thin and soak in salted ice water (this prevents browning). 1/2 tsp per cup of water for 5-10 minutes.
- 2
Mix together the grated cheddar, honey, vinegar, lemon, 1/3 cup olive oil, salt, pepper, dijon and mayo.
- 3
Fry the almonds in the 2 tbsp olive oil until nicely golden.
- 4
Add the arugula in a mixing bowl with the apples and the dressing. Massage the dressing in gently. You might have some dressing leftover.
- 5
Top it with the almonds, shaved cheddar and fresh cracked pepper.
