Ingredients
- 4 links Italian Sausage (mild or spicy)
- 1 red bell pepper (seeded and diced)
- 1 cup diced red onion
- 4 medium yukon gold potatoes (diced)
- 2 tablespoons olive oil
- 2 teaspoons seasoned salt
- pinch cayenne
- 2 tablespoons grated Parmigiano-Reggiano (optional, to garnish)
- 1 pinch chili flakes (optional, to serve)
- 2 tablespoons minced fresh parsley or basil (optional, to garnish)
Steps
- 1
Pre-heat the air fryer to 400 degrees.
- 2
To cook the sausages, place sausage links in the air fryer basket in a single layer. Cook for 14 minutes at 400 degrees, flipping halfway through, until browned on the outside and cooked through (internal temp of 160 degrees.) Transfer to a cutting board and slice into 1-inch rounds.
- 3
In a medium bowl, toss together peppers, onions and potatoes with olive oil, seasoned salt and cayenne. Toss well then place in air fryer basket in single layer. Cook at 400 degrees for 20 minutes, shaking the basket a bit halfway through to ensure even browning occurs.
- 4
Return the sliced sausage back to the air fryer basket with the veggies. Mix together and cook for 2-3 more minutes until everything is heated through and caramelized together.
- 5
Transfer to a large platter then garnish to serve with grated cheese, fresh herbs and chili flakes if you wish.
