Ingredients
- 8 oz ahi tuna
- 9 wonton wrappers
- 1/3 cup Japanese mayo (plus 2 tbsp)
- 2 tbsp gochujang
- 1 tsp ginger (fresh)
- 1 lime
- 3 tbsp tamari
- 1 tsp rice vinegar
- 1.5 tsp sesame oil
- 1 leek (washed and thinly sliced)
- Avocado (slices)
- Sesame seeds (to taste, for topping)
- Scallions (to taste, for topping)
- 2-3 mini cucumbers (thinly sliced)
- Jalapeño slices (to taste, for topping)
Steps
- 1
First, make an "X" on some wonton wrapper so they don’t puff up. Then, spray some avocado oil and bake at 350F for 8-10 minutes.
- 2
Secondly, slice the leeks really thin, add to a pan and cover in avocado oil. Then, cook on high for 2 minutes and lower heat to medium low until golden. About 5-7 minutes. Let rest over a paper towel.

Then, mix together the mayo, ginger, Gochujang and a few drops of lime.
- 4
Slice the ahi real thin and marinate in the remaining lime, Tamari, sesame oil and rice vinegar for 2-3 minutes.

Lastly, spread the mayo on the tostadas, add some cucumber slices, ahi, avocado, sesame seeds, fried leeks and jalapeño slice. Serve with more lime.
