- 4 ancho or California dried chiles
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 3 cloves garlic (peeled)
- Juice of 1 orange
- Juice of 1 lemon
- Juice of 1 lime
- Warm water (for soaking chiles)
Steps

Remove the seeds and veins from the chiles, tear them into small pieces, and place them in a bowl.
- 2
Cover the chile pieces with warm water and soak for about 30 minutes, or until they begin to swell.

Drain the chiles, reserving the soaking liquid.
- 4
Combine the soaked chiles, oregano, cumin, black pepper, garlic, orange juice, lemon juice, and lime juice in a blender or food processor.
- 5
Blend to a thick, slightly coarse paste, adding a little reserved soaking liquid if needed to help the mixture move.
- 6
Use immediately on 6 to 8 pork chops or about 2 pounds of cubed pork.
